Simple Bruchetta


A flavoursome, simple, tasty, healthy, fresh bruschetta made in minutes in using fresh ingredients.
5 medium tomatoes or 12 baby/vine tomatoes roughly chopped
½ red onion chopped up finely 3 cloves of garlic crushed
A handful or so of fresh basil roughly chopped
15-20 ml approx… of balsamic vinegar
30 ml approx.  of olive oil
Salt & pepper to taste
6 slices of crusty bread (I used brown sourdough from freezer in video)
Mix all the ingredients except the bread in a bowl and set aside for an hour if time permits! (this will allow the flavours to blend) Toast bread and serve mixture on top and if mixture has been in fridge, remove from fridge ½ hour before serving and that’s it!! You could serve as a starter or a side to mains lunch dish.
