Simple Leek & Carrot Soup

Recipe and Ingredients for Simple Leek & Carrot Soup

  • 1 onion
  • 2/3 cloves of garlic and a few more if you like it!!
  • 1 leek
  • 4 carrots
  • 1 tsp. dried coriander
  • 1 tsp dried oregano
  • 1000 ml of stock (eg Bouillon powder or use bone broth if you have it)
  • a handful of fresh coriander and a small handful of fresh oregano if you have it but using dried oregano is sufficient for this recipe.
  • 1 tbsp coconut oil, salt +pepper for taste. 

Chop all vegetables to a similar size.
Heat oil in pan and add onion + garlic and lighly fry for 2 minutes on medium heat until soft.
Add leek and carrots and sweat for 3-4 minutes before adding in dried herbs and stock. Bring everything to boil and simmer for aporox 15 minutes until vegetables are soft (use a fork to test) and add fresh herbs a few pinches of salt and pepper and blend up.

Serve with a slice of Ciaras homemade bread (see video and recipe) or the Linseed Low Carb Bread(see video and recipe) and some chicken/fish/ beans or lentils/ eggs/avocado etc.
